Dr. Maya Davidovich-Pinhas graduate her BSc in Biochemical Engineering and both her MSc and PhD in the Chemical Engineering department at the Technion, Israel. During her graduate studies, she developed new family of mucoadhesive polymer aiming for biomedical and pharmaceutical applications. Dr. Davidovich-Pinhas continued her research as a post-doctoral fellow at University of Guelph and specialized in oil based gels, termed oleogels. More specifically, she worked on the formation of oleogels using ethyl-cellulose and small molecules that crystallize and form three-dimensional network. Dr. Davidovich-Pinhas specialized in structure-function relation of lipid based biomaterials using x-ray diffraction techniques, physical characterization of biopolymers and lipids, rheology and texture analyses.
